Happy Holidays! This white chocolate peppermint brittle is a very easy and fun candy to make….and a perfect way to kick off the holidays. It’s also the perfect companion to a dark chocolate fudge for a festive gift. I love using candy canes in desserts, there are so many fun ways to play with them. Their peppermint crunchiness is a great addition to cookies and cakes, in addition to being a super cute garnish!
- 1 12 ounce bag of white chocolate chips
- 8 candy canes
- 1 teaspoon pure peppermint extract
Remove candy wrappers from candy canes and place in a large ziplock bag.
Using a meat tenderizer, hammer, or other mallet, break the candy canes into very small pieces. Set aside. Line a large cookie sheet with ungreased foil. Set aside.
Place white chocolate chips in a medium glass bowl. Bring a small amount of water to a simmer in a medium sized saucepan. Place bowl of while chocolate over the simmering water, ensuring that the bowl is not touching the water. Let chocolate sit until chips begin to melt, then begin to stir.
Continue stirring chips over the heat, keeping the water below a boil. It’s really important to avoid overheating the chocolate to maintain a smooth, creamy product. Remove bowl from heat while 1/3 of the chips are still maintaining some of their shape. Continue to stir until all chips are melted.
Add crushed candy canes and peppermint extract to melted chocolate. Stir just until combined.
Quickly transfer brittle to foil lined cookie sheet.
Spread brittle onto until about 1/2 inch thin and even. Let set for at least two hours, then break into bite sized pieces. Package in bags, jars, or other airtight containers.
