OK…Fall, Summer, Fall, Spring….guess we are back to being summer today! I’m as bad as the weather and can’t decide on a season either! But the wonderful juicy tomatoes I picked definitely declared it to be summer…with much more to come.
I’m not sure what that one tomato plant is reaching for over there, but who cares!
And the best part about fresh tomatoes is trying to decide what to make for dinner. BLT’s, pasta with fresh marinara, salads…the list goes on and on!
But how about a Barbacoa burrito with fresh made Pico de Gallo! Chipotle eat your heart out…we don’t need you anymore!
I have to admit to playing sou chef for this meal. I can claim the cilantro lime rice and chips. My only contribution to the Barbacoa Beef was hovering around it, sniffing, asking if it was ready yet. Oh, and I ate three servings as well…that was my other contribution. I am so helpful! Here’s what went into the burrito:
Cilantro Lime Rice, Black Beans, Barbacoa Beef, Guacamole, Pico de Gallo, and Tortilla Chips on the side. All homemade and only took most of the day! It’s a pretty rough life around here!
